Energy Bar: Chocolate Blueberry

This Low glycemic index (GI) energy bar will provide energy for hours. And because of their fiber and protein keep you feeling full. High in antioxidants and flavonoids they also help reduce free radical damage and improve cellular recovery.

Ingredients

  • 1 cup fresh (or soaked) dried dates
  • 1/2 cup almonds (soaked and dehydrated are best)
  • 1/4 cup fresh blueberries
  • 1/4 cup roasted carob powder (or cocoa to make 100% raw)
  • 1/4 cup ground flaxseed
  • 1/4 cup hemp protein
  • 1/4 cup un-hulled sesame sesame seeds
  • 1 tsp fresh lemon juice
  • 1/2 tsp lemon zest
  • Sea salt to taste (optional)
  • 1/2 cup sprouted buckwheat (optional)
  • 1/2 cup frozen blueberries

Instructions

Process all ingredients (Except the buckwheat and blueberries) In a food processor. Knead the remaining ingredients into the mixture by hand or spatula.

Divide and shape into either 12 equal bars or 24 equal balls. Leave out to dry, or dehydrate at 115° F or leave to air dry to where they’re easy to handle.
